Wild Boar Stew
Ingredients:
- 1 kilo of wild boar meat.
- 3 medium sized potatoes.
- 1 Blanquilla pear.
- 1 Golden Delicious apple.
- 1 carrot.
- 1/2 large onion.
- 1 handful of aromatic herbs.
- 1/2 cup of olive oil.
- 1/2 bottle of red wine.
- 1 bay leaf.
- Salt and pepper.

Elaboration:
- Cube the meat and put it into an earthenware pot.
- Peel and slice the apples and pears and put them into a saucepan with the sliced carrots and onions.
- Add the herbs with the wine so that it covers everything. Leave to marinate in a cool place for two days.
- After these two days, strain everything and leave the wine to one side. Separate the rest, taking out the pieces of pear, apples and herbs.

- Put an earthenware casserole dish on the flame and add olive oil. Little by little, add the meat and when it’s lightly fried add the wine, carrots, onion and bay leaf.
- Bring to the boil and turn down the flame, leaving for an hour for the meat to become tender.
- Once the meat is soft, add the potatoes, salt and pepper and leave for another half an hour to thicken.
