Salmorejo Cordobés

Ingredients:

  • 3 boiled eggs
  • Serrano ham
  • 2 hard baguettes - remove the crust and cut it into slices.
  • 3 large ripe tomatoes
  • 2 cloves of garlic
  • 1 cup of virgin olive oil
  • Vinegar
  • Water
  • Salt

Elaboration:

  • Soak the bread for about half an hour to soften it as much as possible.
  • Drain the bread to get as much water out as possible.
  • Put the bread, peeled garlic, seeded tomatoes, one egg and a glass of oil together.
  • Mix it all together to make a creamy consistency and add the salt and vinegar to taste.
  • Keep the mixture cool until serving.
  • To garnish, sprinkle on the chopped boiled eggs and cubes of ham.
