Beef a la Sevillana
Ingredients:
- Beef, 800 grams
- 2 medium sized onions
- 1 clove of garlic
- 1 cup of meat stock
- 1 tablespoon of toasted almonds
- 2 tablespoons of stoned olives
- ½ a cup of dry white wine
- 1 cup of fried tomato
- 2 sticks of cinnamon
- 4 tablespoons of olive oil
- salt, to taste
- black pepper, to taste

Elaboration:
- Wash the meat and take the fat off.
- Stuff it with the olives, almonds and cinnamon sticks
- Chop the onions and garlic
- Fry the meat on both sides until it’s golden.
- Add the oil, onion and garlic.
- Lightly fry, without letting the garlic darken too much
- Add the stock and wine, salt and pepper
- When it comes to the boil, cover and leave until the meat’s tender
- Serve with the sauce and the fried tomato
