If you want to appreciate traditional regional cooking, cooking as it
is known in Marbella and Málaga, you merely to have to visit one
of the many local cafes or restaurants to be found in the
local districts at the centre or on the outskirts of the town.
Many of these establishments have passed down from grandparents
to grandchildren, and have kept alive the original flavour
as much in the decoration and renovation of old properties
as in the labours in their kitchens, with closely guarded
family recipes, almost like renovation projects themselves,
using traditional ingredients and cooking techniques, the
pots full of delicious ingredients, the mountains of plates,
the jugs stuffed of spoons and where the nearly forgotten
traditions are still maintained in the era of the mobile
phone and the
internet…
